HOMEMADE LOBSTER STOCK

 2 lobster heads and shells, reserved from cooked lobster
 4 tbsp olive oil
 2 medium onions, diced
 1 fennel bulb, diced, fronds reserved
 4 celery stalks, sliced
 2 carrots, diced
 2 large tomatoes, diced
 4 cloves garlic, roughly chopped
 4 tbsp tomato paste
 4 bay leaves
 1 bunch thyme
 1 tsp salt
 1 cup white wine (or replace with water)
 2.50 l water

Add all ingredients to a large saucepan or stockpot.

Simmer on medium-low for as long as possible, 4 hours plus.

When ready, skim off any froth and strain liquid into a large bowl or saucepan for future use.

Store, covered, in the fridge for up to 4 days.
