How to shell a lobster

Remove the head by twisting firmly in opposite direction to the tail.

Rinse any tomalley from the neck meat under gently running cold water.

Flip the tail upside down so the soft shell is facing up. Using kitchen scissors, snip along both sides of the tail, cutting through the hard shell close to where it joins the softer belly membrane. Peel back the shell like opening a can of sardines.

Use your hands to gently pry the meat from the sides of the shell and loosen it. The meat should come out easily and neatly. Cooked tail meat is firmer and easier to remove in one piece compared to raw tail meat.
