SALT & PEPPER LOBSTER

 3 western rock lobsters, dispached
 ¾ cup plain / all-purpose flour
 2 tbsp cornflour
 ¼ tsp baking powder
 ¼ tsp baking soda
 ¼ tsp salt
 ¾ cup cold water
 2 cups vegetable or canola oil
 2 cloves garlic
 1 chilli (seeds removed)
 ¼ cup thinly sliced onion (either red or spring)
 Salt and pepper to taste
 fresh coriander
Batter and Fry the Lobster

Remove the tail meat from the lobster and chop it into small, bite-sized pieces.

In a bowl, combine the flour, cornflour, baking powder, baking soda, salt, and cold water. Mix well to form a batter.

Dip the lobster pieces into the batter, ensuring they are fully coated.

Heat oil in a deep fryer or deep pan. The oil is ready when a wooden spoon inserted into it bubbles vigorously.

Fry the coated lobster pieces in the hot oil until golden brown. Remove and place them on paper towels to drain excess oil.

Flavour the Oil and Coat the Lobster

In a separate pan or wok, heat oil over medium heat.

Add chopped garlic, chili, thinly sliced onion, salt, and freshly ground pepper.

Add the fried lobster bites back into the pan or wok, stirring to coat them evenly with the flavoured oil.

Serve immediately, garnished with fresh coriander.
