WILD BBQ LOBSTER WITH LIME, CHILLI & GINGER

 1 600-700g MSC certified wild-caught lobster, cut in half
 250 Soft butter
 1 tsp Chopped coriander
 1 tsp Minced ginger
 1 tsp Lime rind
 ½ tsp Minced chilli
 Salt and pepper to taste

Preheat your oven to 180 celsius or BBQ to medium.

In a bowl mix your soft butter, coriander, ginger, lime rind, chilli, salt and pepper in a bowl until combined evenly.

Using a spoon, butter the flat flesh side of your prepared lobster generously.

Place on your prepared BBQ or in your oven shell side down and cook on medium to low heat for 25 minutes or until the flesh has changed colour and is white. To speed the cooking process up, close the lid of your BBQ or cover your lobster with a metal bowl.

Let your lobster rest for 5 minutes then serve hot.
